Lemon Yogurt Strawberry Parfait
2 servings
1 1/2cup Plain Greek Yogurt
1 tbsp Chia Seeds
2 tbsp Almond Butter
2 tsp Maple Syrup
1 tsp Lemon Zest (plus more for garnish)
1/4 tsp Vanilla Extract
1/2 cup Granola
1 cup Strawberries (chopped)
In a small bowl, mix together the yogurt, chia seeds, almond butter, maple syrup, lemon zest, and vanilla extract.
To assemble: Add half of the granola into the base of a cup. Add a layer of half the yogurt mixture, followed by half of the strawberries. Add the remaining granola on top, and finish with the remaining yogurt and strawberries.
Top with more lemon zest, if desired. Enjoy!
